Designed with a 40-pound oil capacity, the Imperial IFS-40 commercial gas fryer works well in medium-volume operations. In the frypot, oil is heated by a tube burner system consisting of a large heat transfer area and cast iron burners. Because the burners are submerged in the oil, they heat efficiently, and the deflector system improves heat-up times and recovery. Running at lower temperatures than the frying oil, a cool zone under the burners captures sediment to prevent it from burning and affecting the oil quality.
The frypot bottom is sloped, directing oil and sediment to the drain. Using the snap-action thermostat, the temperature in the Imperial IFS-40 gas fryer is adjustable with a preset range from 200 to 400 degrees Fahrenheit. Twin fry baskets are included, and they are large enough to hold big products. Their vinyl-coated handles are resistant to heat transfer for user protection.
